What is creep or binders creep and how does it affect my design?

Creep happens because folded sheets stack inside each other. Inner pages stick out more, so they lose more when trimmed. If you ignore it, margins tighten and the booklet looks slightly off. Thicker stock and higher page counts make it worse.
